Pumpkin Pie



Have you ever seen the movie 'Waitress'? It is quite a good one to be watched..... If not for the full movie, atleast the first few minutes (title card scenes) should definitely be seen if you love to see food on screen. Especially here, it is, in and out pies, pies... pies.... I bet you'll start drooling before the movie starts.... It is a visual treat for food lovers like me..... 

It was only after that, my special interests in pies started developing intensely.... I was always holding myself back from making them, as I thought a healthier version of a maida with butter, for a base tart was impossible... but when I came across this, which had an oats crust I just popped out my pie tin at once...... and the journey started.... with hopes to make lots and lots of various pies...


Isn't it tempting even before sitting in the oven?


For the crust you will need..........
(To make 2 thick tarts or 3 thin ones...)

Oats - 1 cup 
Flour - 1/2 cup
Olive oil - 3 tbsp
Cold water - 2 tbsp (or more)
Salt - a pinch


Crust Making...........

  1. Use quick cooking oats. If you are using rolled oats, saute them dry in a pan for a few minutes until the raw smell vanishes. Cool them down.
  2. Grind the oats to fine powder.
  3. Mix oats, salt and flour together. Make a well in the centre. Pour in the olive oil. Rub it with your finger tips until the oil is incorporated.
  4. Start adding water little by little until all the ingredients hold together.
  5. Now spray a pie dish (with a removable bottom) with oil. 
  6. Place the dough in the pie dish and spread it out evenly. Bake the pie crust at 200 deg for 10 min. (I actually forgot this baking part.....)


For the filling you will need..........

Pumpkin puree - 3/4 cup
Sugar - 2 tbsp
Milk - 1/4 cup
Corn flour - 1 tbsp
Chocochips - a handful
Almonds - a handful


Get going..........
  1. To make the pumpkin puree... you can cut the pumpkin into small cubes and bake them for an hour or steam cook them in a pressure cooker and then run them in a blender.
  2. Mix corn flour in cold milk and add it to the pumpkin puree. Add in the sugar also. Mix everything well. 
  3. Pour them into the prepared crust... well upto the brim.
  4. Top them with chocochips and almonds.
  5. Bake the pie at 200 deg for 35-40 min until the top turns brown.
  6. Cool them completely before slicing..... as the pumpkin takes time to become firm....


Enjoy your pie, dusted on top with sugar or syrup or chocolate sauce or just plain!!!!!!!!!!!!!!!!
