Vegetable Cutlets


It's Diwali today................. Celebrations are all over the place.........  Here, it's me WISHING YOU ALL A VERY HAPPY DIWALI........

Cutlets are my favorite !!!! right from my childhood days. Whenever there's a special occasion or a guest at home.... my mom asks what shall we make for them... and inevitably, cutlet will top 'my most wanted' list.... I can still clearly remember the way she prepares them... First she'll make the filling.... then wrap it around with  a bread drenched and squeezed with milk.... then she slides them into oil.... and lift out the golden colored rounds. What a pleasure eating them!!!!!!!!!!!! It's only after that we became health conscious.... started to toss them over tawa... with only a few drops of oil.... but still their taste was nevertheless compromising... This recipe here is adapted from Rak's Kitchen


You will need..........

Potato - 1/2 cup (cooked and mashed)
Mixed veggies - 1 cup (microwaved for 3 mins)
Wheat bread - 3 slices (pulsed in a mixie)
Cumin seeds - 1 tsp
Green chillies - 3 (chopped finely)
Ginger garlic paste - 1  tsp
Coriander leaves - 2 tbsp
Onion - 1 (chopped finely)
Chilli powder - 1 tsp
Garam masala - 1/2 tsp
Turmeric powder - 1/4 tsp
Egg - 1 (beaten slightly)
Bread crumbs - 2 tbsp
Salt - to taste
Oil


Get going..........

  1. Heat a tsp of oil in a kadai. Temper it with jeera seeds. Now add in green chillies followed by ginger garlic paste. Saute for a min.
  2. Now add in the onions, chilli powder, turmeric powder, garam masala and saute till onions turn transparent. Switch off the stove.
  3. Add in the mixed veggies, coriander and potatoes along with the pulsed bread and salt. Cool it for a while.
  4. Divide the mixture into balls. Flatten them. Dip in the beaten egg. Roll them over the bread crumbs and place them on a hot tawa.
  5. Cook them with a few drops of oil until they turn golden brown. Or you can even shallow fry or deep fry them. 
  6. Now your cutlets are ready for taste....

Enjoy them with a cup of tea!!!!!!!!!!!!!!!
