Soya Bhurji

Soya chunks has become a routine in everyone's diet these days...... good thing.... indeed! I've mostly done Soya chunks curry for roti... but when I saw this recipe I badly wanted to try this out.... It was a yummy side-dish  for tomato rasam... I used the left-over for making sandwiches the next morning.....

You will need..........

Soya chunks - 1 cup
Onion - 1 (chopped)
Capsicum - 1 (chopped)
Ginger garlic paste - 1 tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Turmeric powder - 1/4 tsp
Kasoori methi - 1 tsp (crushed)
Lemon juice - 1 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp
Salt - to taste
Oil - 2 tsp

Get going..........
  1. Cook the soya chunks in hot water and squeeze them out. Run it in a blender to crumble them.
  2. Heat oil in a pan and season it with mustard and cumin seeds.
  3. Add the onions followed by ginger garlic paste. Saute till onions turn transparent.
  4. Add the chopped capsicum with turmeric powder and saute it until cooked.
  5. Add chilli, coriander and salt. Saute well.
  6. Add the crumbled soya chunks. Mix well. Cook for a few mins. Add little water if the mixture is too dry.
  7. Now add in kasoori methi and garam masala.
  8. Combine everything. Add lemon juice and switch off the stove.

Enjoy it hot with rice or have it in your sandwich!!!!!!!!!!!!!!!!!!
